39 Qvevri is located in the village of Bitsmendi, one of the most significant historical places in Kartli, the center of viticulture and winemaking. Bitsmendi has a special historical significance and is
associated with famous traditional Georgian winemakers and teachers.
The climate in this region creates the perfect combination of sunny days and cool, windy nights, making it ideal for the ripening of 39 Qvevri's grapes. This is truly a vineyard at the heart of winemaking!
Each bottle of 39 Qvevri wines is fermented in a Qvevri in the traditional Georgian style. A Qvevri is a large earthenware vessel which is buried underground. The qvevri allow the extraction of flavours and structure as grape musts can move around more freely inside these smooth, egg-shaped pots.
David Chichua is the chief winemaker at 39 Qvevri. His passion for ancient, indigenous grape varieties led him to the Agricultural Research Center in Jigaura, where he could work while teaching.
Experiments with nearly extinct grape varieties and the search for the best winemaking technologies made it possible to create the wine "39 Qvevri" where he works with fellow colleague Vazha Tchabukiani, a young and enthusiastic winemaker who graduated from Georgian Agricultural University.
